Handling And Maintaining knives In a Commercial Kitchen




  Keep knives properly stored  to keep it sharp. Knives can be stored in slots racks, and magnetic knife holders. Magnetic knife holders are use to organised kitchen knives and it is easy to grab. Make sure that your knives are clean before storing it .Make sure you do not put knives in the dishwasher for a long time because dishwasher detergent is very abrasive, and along with the banging around that happens during a  wash cycle, will take the sharp edge right off your knife.

Soak the water stone for 45 minutes.  Let the stone soak for at least 45 minutes before you begin sharpening your knives.

Place the stone on a damp cloth. Lay the damp cloth on your work surface and place the stone on it. The cloth will keep the stone in place while you're sharpening your knives.

Hold the knife against the stone. Use one hand to hold the knife so the blade is at a 20 degree angle. The edge of the blade should be facing away from you. Place the fingertips of your other hand on the flat part of the blade near the sharp end.
Sweep one side of the blade across the stone. Slowly slide the blade down the stone and sweep it in an arc as it moves. Turn the knife over and sharpen the other side
Always sharpen the knives evenly so the blade remains balanced.
Once you think you've completely sharpened your knife, wash it and dry it.Clean the knives and stone. As soon as you've finished sharpening your knives




Hold the knife firmly by the handle. The tip of the blade should point upward. Move the blade from the bolster or back wide part of knife to the point. Hold the knife at an angle of about 20 degrees with a slight pressure over the steel.

You need damp cloth or towel. Make sure that you put damp cloth or towel underneath the chopping board so that it will steady perfectly. And this help to prevent chopping board to sliding while slicing or chopping foods. And also to help the person to focus.


When carrying knife make sure the blade is pointing downwards and away from your body. And don't swing the knife because you might hurt someone around you and also do not walk fast or even run with  a knife in your hand. You should pick the knife in the handling not in the blade and also if someone wants to borrow knife put them in the clean surface and let them pick it up.

                                      Personal Hygiene


One personal benefit of good hygiene is having better health. Keeping your body clean helps prevent illness and infection from bacteria or viruses. Like in our example, the simple act of washing your hands regularly is an effective way to keep germs from spreading.

As you can see here's the picture it show 4 easy step by step how to keep your hands clean.

1. Wet your hands using clean water.

2. Get a soap and rub your hands for about 20 seconds.

 
                           3. After that wash your hands using clean water.

                                             4. Then dry your hands using towels.
 


Keeping hands clean through improved hand hygiene is one of the most important steps we can take to avoid getting sick and spreading germs to others. Many diseases and conditions are spread by not washing hands with soap and clean, running water. You should cut your nails.Avoid biting or chewing nails. Make sure that your hands and finger nails are clean before cooking to avoid contamination. If you have polish to your nail you need to remove that using polish remover before you start cooking. Before you start cooking you need to remove the jewelry you are wearing. Because there are a lot of germs can be found under rings, bracelet and watches and the jewelry might fall to what you cooking so you
better remove them.


It is important to tied your hair back while cooking because to keep away from food. Also make sure that do not touch your hair while cooking because this can spread germs. 
If you're doing unavoidable activities like visiting toilet, smoking , nose blowing handling rubbish or chemicals, handling money, handling raw f









Why do we need apron because to protect our clothes for spill foods that you are making or preparing and also for hygienic as well you need to have proper footwear and clothing to helps prevent injury and to protect you to hot spill liquids food. And make sure wear gloves when  you are removing something in the oven so that you don't burn your hands.







Task 5

Always sanatise the table before and after cooking so that to remove bacteria to kill germs from the table. When storing food it’s so important that to keep food safe eg. like storing meat and fish It's important to store meat and fish  safely to stop bacteria from spreading and to avoid food poisoning. You should store raw meat and poultry in clean, sealed containers on the bottom shelf of the fridge, so they can't touch or drip onto other food. Before you start preparing food the staff your gonna use needs to be clean like knife, chopping board etc. And check the expiry date of the food so that to prevent poisoning. When cooking you always need to have a container to put the rubbish.

Task 7
Uncooked food item should be in 0-4 degrees
Cooked food item should be in 75 degrees
When reheating the food, it must be in 80 degrees

Immediately tell to your boss if the temperature is in the wrong degree. And if your boss wasn’t at work immediately change the degree in the correct position.The bacteria might grow when the fridge is in danger zone.
